Cooking Instructions

Place the Sweetened Condensed Milk (1 can) in the large pot. Fill with water until the can is submerged by 1-2 inches. Turn on the heat to medium-high. Once boiling, reduce to simmer for about 2-3 hours. Make sure to check the water level and refill as necessary.

Preheat the oven to 375 degrees F (190 degrees C).

Line parchment paper on the baking sheet.

Prepare the cookie dough. Mix All-Purpose Flour (2 cups), Corn Starch (1 cup), and Powdered Confectioners Sugar (1/2 cup) in a mixing bowl.

Add Salted Butter (1 cup) and mix well until the dough forms. At first, it will be crumbly and dry after that, the dough will be soft and uniform.

Roll out the dough to 1/4-inch thick. Then use about 1 ½-inch round mold to cut. Repeat with other disks of dough. Reroll and cut. If the dough is too soft and sticks to the rolling pin, you can put it in the fridge for a couple of minutes to make it easier to roll and cut.

Place the cookie dough on the baking sheet. Bake for 8-12 minutes or until golden brown.

Remove from the oven and let it cool completely. Then add dulce de leche into a piping bag and fill half of the amount of the cookies with it.

Add another cookie on top to form the sandwich. Roll the side of each cookie on the Unsweetened Shredded Coconut (4 Tbsp).
