Bacon and Shrimp Quinoa Fried Rice

Quinoa is super nutritious and good for you, use quinoa in place of rice for this recipe and you'll be pleasantly surprised as to how good it taste!

Bacon

Green Beanscut into 1cm pieces

Large Shrimpcut into halves or thirds

Garlic, chopped

Frozen Peas and Carrots

Soy Sauce

Fish Sauce
to taste
Scallions, chopped

Cooking Instructions

step 1

Cook the Quinoa (3 cups) in a rice cooker just like you would with regular rice.

In a wok or large pan, heat up about a teaspoon of butter. Scramble the Eggland's Best Classic Eggs (2), then remove from wok. Set aside.

Fry the Bacon (2 slices) till slightly brown.

Add the Green Beans (1 cup) and stir-fry for about a minute.

Add the Large Shrimp (7) and add more Butter (2 Tbsp) as needed.

Add Garlic (3 cloves) and Frozen Peas and Carrots (1 cup).

Add quinoa. Stir-fry for a few seconds, then add the Soy Sauce (4 Tbsp) and Fish Sauce (3 Tbsp). Mix thoroughly until everything including the soy sauce and fish sauce is well combined.

Garnish with Scallions (to taste). Enjoy!
