Bacon Guacamole Grilled Cheese Sandwich

A buttery and toasty grilled cheese sandwich stuffed with cool and creamy guacamole, crispy bacon and melted jack and cheddar cheese. The crunchy crumbled tortilla chips in this grilled cheese pay tribute to the classic combination of tortilla chips and guacamole dip.

Cooking Instructions

step 1

Cook the Bacon (2 slices) over medium heat in a skillet until crispy, flipping halfway through cooking.

Drain on paper towels and set aside.

Spread Unsalted Butter (1 Tbsp) on one side of each piece of Sourdough Bread (2 slices).

Shred the Jack and Cheddar Cheese (1/2 cup).

Sprinkle half of the cheese onto the unbuttered side of one slice of bread.

Add Guacamole (2 Tbsp) and the bacon on top of the cheese.

Top with crumbled Tortilla Chips (1 Tbsp) and the remaining cheese.

Finally, top with the remaining slice of bread with the buttered side up.

Grill over medium heat until golden brown and the cheese is melted, about 2-3 minutes per side. Serve warm and gooey.
