Boxty - Irish Potato Pancakes
A traditional Irish favorite, these potato pancakes are crispy on the outside and tender on the inside, made with a mix of grated and mashed potatoes. In a large bowl, combine the Mashed Potatoes (1 cup),Potato (1 cup), All-Purpose Flour (1 cup), Baking Powder (1/2 tsp), Salt (1/2 tsp) and Ground Black Pepper (1/4 tsp). Mix thoroughly until combined.

Gradually add the Milk (1/2 cup) to the potato mixture, stirring until you get a thick, slightly sticky batter. The consistency should hold its shape but still spread slightly when dropped into the pan.

Heat a large skillet or frying pan over medium heat. Add a tablespoon of Butter (2 Tbsp) or oil to coat the surface.

Scoop about 1/4 cup of batter for each pancake into the skillet, pressing gently with a spatula to flatten it slightly. Cook for 3–4 minutes on each side, or until golden brown and crispy on the edges.

Transfer the cooked pancakes to a plate lined with paper towels to remove any excess oil. Keep them warm in a low oven if needed while cooking the remaining batter.
