In a medium mixing bowl, combine the Dark Brown Sugar (1/2 cup), Fish Sauce (2 Tbsp), Rice Vinegar (4 Tbsp), Garlic (1 clove), Ground Ginger (2 tsp), and Coarse Black Pepper (1 Tbsp). Set aside.

In a frying pan, heat Vegetable Oil (3 Tbsp) over medium-high heat. Add Yellow Onion (1) and cook until softened, about 3 minutes.

Add the Boneless, Skinless Chicken Thighs (1.5 lb) and cook for about 5 minutes until lightly charred.

Add the sauce mixture and turn the heat to high, bring to a simmer until the chicken is cooked through and the sauce has thickened; about 10-15 minutes. Stir occasionally.

Transfer to a serving plate. Optionally garnish with Fresh Cilantro (to taste). Serve warm with White Rice (to taste) if desired.
