Caribbean breadfruit pie is a rich, creamy, and cheesy baked dish that’s a favorite in island cuisine. Made with tender breadfruit, a savory cheese sauce, and warm spices, this comforting side dish pairs perfectly with stewed meats, seafood, or grilled favorites.

Cut the Breadfruit (1) into chunks and boil in salted water for 20-25 minutes until tender. Drain and mash.

Preheat oven to 350 degrees F (175 degrees C).

In a saucepan, melt Butter (3 Tbsp) over medium heat. Add Onion (1/2) and Garlic (2 cloves), sautéing until soft.

Stir in Evaporated Milk (1 cup), Shredded Cheddar Cheese (1 cup), Grated Parmesan Cheese (1/2 cup), Salt (1/2 tsp), Ground Black Pepper (1/2 tsp), Paprika (1/2 tsp), Dried Thyme (1/2 tsp), and Ground Nutmeg (1/4 tsp). Cook until cheese melts.

Remove from heat and mix in mashed breadfruit and beaten Eggland's Best Classic Egg (1) until smooth.
