Caribbean Cabbage Mango Slaw
Cabbage and Mango Slaw- this healthy, detoxing recipe is low in fat, vegan and gluten-free. Makes a delicious summer side salad. I love the healthy clean tropical flavors and crunchy texture. And it’s so versatile perfect as a healthy side salad for a summer BBQ, adding brightness to heavy meals. It also can be made ahead, and keeps for days!

Peel the Mango (1) a vegetable peeler, then slice into thin strips, cut in half or thirds, place in a large bowl.

In a large bowl, add Red Cabbage (3 cups) along with the Fresh Cilantro (1/3 cup), Red Onions (4 Tbsp), and Jalapeño Pepper (1/2).

Zest the Orange (1) and Lime (1) into the bowl. Add the juice of half the orange, and half the lime.

Add Oil (2 tsp) and Salt (1/2 tsp) and mix gently to combine. Taste. Often I will squeeze in the other half of the orange.

Refrigerate until ready to serve!
