In a heavy-bottom saucepan, combine Granulated Sugar (1 1/2 cups), Water (1/2 cup), and Salt (1/2 tsp). Stir over medium heat until sugar dissolves.

Add grated Coconuts (2 cups), Simply Organic Cinnamon, Ground (1/2 tsp), and Ground Nutmeg (1/2 tsp). Cook, stirring frequently, until the mixture thickens and starts pulling away from the pan (about 15 minutes).

Stir in Vanilla Extract (1/2 tsp) and Pink Food Coloring (2 drops) if using.
