In a mixing bowl, combine Rotisserie Chicken (2 cups), Basil Pesto (3 Tbsp), Frozen Spinach (1 cup), Shredded Mozzarella Cheese (1 1/2 cups), and season with Ground Black Pepper (to taste).

On a flat surface, place a Large Flour Tortillas (4). Spread the chicken mixture around and cover with another tortilla.

In a pan over medium heat, grease with cooking spray. Place the quesadillas and cook for 2-3 minutes on each side until golden and cheese has melted.
