Chicken with Cashew Nuts

This is a quick, easy and tasty meal. The sauce has so much depth of flavor. The chicken is moist and tender. The best part about it is that it just takes minutes to prepare. No need to marinade. I recommend using chicken thighs for this dish, but chicken breast will also work.

Boneless, Skinless Chicken Thighscut into bite-sized chunksor Chicken Breast

Onionsliced into thin strips

Toasted Cashew Nuts
1Tbsp
Fish Sauce
1Tbsp
Soy Sauce
1Tbsp
Oyster Sauce
1 1/2Tbsp
Palm Sugaror Brown Sugar
to taste
Scallions, chopped

Cooking Instructions

step 1

Heat Peanut Oil (2 Tbsp) in wok over medium heat.

step 2

Add Garlic (1 Tbsp) and Onion (1/2), fry till fragrant, about 30 seconds.

Add Boneless, Skinless Chicken Thighs (2 cups).

step 4

Stir-fry until chicken is almost fully cooked.

Add Fish Sauce (1 Tbsp), Soy Sauce (1 Tbsp), Oyster Sauce (1 Tbsp) and Palm Sugar (1 1/2 Tbsp).

Increase heat. Mix well until chicken is fully cooked.

Stir in Toasted Cashew Nuts (1/2 cup).

Garnish with Scallions (to taste) and serve with rice.
