Chickpeas with Cilantro-Lime Dressing
This is a super simple salad: chickpeas, onions, and dressing. In the in-between season of foods, when the comforts of winter have lost some of their appeal yet spring fare still feels months away, this salad could not taste more refreshing.

Cooking Instructions

Place the Fresh Cilantro (7 cups), juice from Limes (2), Olive Oil (4 Tbsp), Garlic (1 clove), Dijon Mustard (2 tsp), Granulated Sugar (2 tsp), Ground Turmeric (1/2 tsp), Salt (1/4 tsp), and Freshly Ground Black Pepper (to taste) in a food processor or blender.

Purée until smooth. Taste. Adjust dressing with more salt, pepper, lime, oil, etc.

Place GOYA® Chick Peas (2 1/4 cups) in a large bowl. Add Red Onion (1). Toss with dressing to taste.
