Chocolate Orange Shortbread

Preheat the oven to 350 degrees F (80 degrees C). Grease and line a 9-inch baking tray with parchment paper, making sure the paper rises above the tray by a couple of inches.

In a large bowl, cream Butter (1 cup), Granulated Sugar (1 cup), and Orange Zest (2) together with a hand mixer until light and pale, about 3 minutes.

Add All-Purpose Flour (2 cups), Baking Powder (1 tsp), and Salt (1 tsp), and mix gently altogether until a dough forms.

Place half of the dough in the prepared tray and press it out evenly, covering the bottom of the tray.

Spread the Orange Marmalade (1 cup) over the dough. Sprinkle the remaining dough and top with the Dark Chocolate (1 cup).

Bake in the preheated oven for 25-30 minutes or until light brown.

Remove from the oven and transfer to a cooling rack to cool down to room temperature.
