The Queso cheese dip recipe is a surefire crowd-pleaser at any holiday gathering. Christmas queso is warm, cheesy, and full of festive red and green peppers. Use orange cheddar or pepper jack, and throw in some chili peppers to spice this holiday-perfect appetizer even more!

Taco Seasoning

Milkplus extra for thinning the sauce

Shredded White Cheddar Cheese
1can(4 oz)
Mild Diced Green Chilesset aside some for garnish
1jar(4 oz)
Diced Pimientos, drainedset aside some for garnish
to taste

Cooking Instructions

step 1

Heat a heavy-bottomed pot over medium heat, then add Butter (2 Tbsp), Garlic (2 cloves), and All-Purpose Flour (2 Tbsp). Stir until fragrant, 30 seconds or so, then add the flour and cook for 2-3 minutes, until a pale blonde color.

Stir in the Taco Seasoning (1 Tbsp) and Milk (1 cup) and continue to stir until thickened.

Turn the heat to low and stir in the Shredded White Cheddar Cheese (4 cups). Stir until completely melted into the sauce. Add a splash of milk if it gets too thick.

Stir in the Mild Diced Green Chiles (1 can), then stir in Diced Pimientos (1 jar). Heat for 2-3 more minutes to incorporate the flavors.

Serve with Tortilla Chips (to taste), garnished with some extra chilies and peppers if desired.
