Churro Skillet Cookie

This is not a churro shaped as a cookie. This is not a cookie that just happens to have cinnamon in it. This is equal parts churro and cookie. It has a warm, cinnamon cookie texture with a crunchy sugary outside that really brings the whole experience full circle. Bonus points for it being the perfect size when you just need a little pick me up.

Cooking Instructions

step 1

Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch oven proof skillet.

Mix the Butter (1/2 cup), Granulated Sugar (3/4 cup), Vanilla Bean Paste (1 Tbsp), and Eggland's Best Classic Egg (1) together.

Sprinkle in the All-Purpose Flour (1 cup), Salt (1/2 tsp), Baking Soda (1/4 tsp), Ground Cardamom (1/4 tsp), and Ground Nutmeg (1/4 tsp). Mix until incorporated. Fold in the Simply Organic Cinnamon, Ground (2 tsp) just until that batter starts to ribbon with cinnamon.

Pour batter into skillet and spread until it meets the edges. Sprinkle the Granulated Sugar (2 Tbsp) evenly onto the top of cookie before sprinkling on the Coarse Sugar (2 Tbsp).

Bake in the oven for 18-20 minutes.

Let cool for at least 30 minutes before serving. Cut into wedges.
