Citrus-Marinated Chicken

A richly seasoned citrus marinade delivers big flavor to these chicken thighs. Serve alongside your favorite veggie sides for a healthy dinner!

Cooking Instructions

step 1

Zest the Limes (3). You will need 1 teaspoon of zest and juice the lime. You will need 1/4 cup juice.

Zest the Orange (1). You will need 1 teaspoon of zest and juice the orange. You will need 1/4 cup juice.

step 3

Put the Fresh Cilantro (1/2 bunch), Scallions (3 Tbsp), zest and juice of lime and orange, Garlic (2 cloves), Olive Oil (2 Tbsp), Low-Sodium Soy Sauce (4 Tbsp), and Kosher Salt (1 Tbsp) in a blender and pulse.

Set aside 1/4 cup of the marinade and put the rest into a ziploc bag. Add Bone-In Chicken Breasts (2 lb) for 20 minutes, or up to 2 hours. When you are ready, preheat the broiler and set rack 5 to 6-inches below broiler.

Place a broiling pan on top of a baking sheet. Remove the chicken from the marinade and place it skin side down on the pan, and place under the broiler and broil until lightly browned on the bottom, about 5 minutes.

Using tongs, turn the chicken over to the skin side, and continue to broil until cooked through and an instant read thermometer inserted into the thickest part of the thighs and breast registers 165 degrees F (75 degrees C), usually after about 12-15 minutes.

Top the chicken with some of the reserved marinade and serve with sides of choice.
