Coca-Cola Chicken Wings
Did you know that Coca-Cola Chicken Wings are one of the most popular dishes in China? These sweet, lightly spiced wings are perfect for any meal, from lunch to a late-night snack. In this version, I added some lemon to balance the sweetness from the soda, just like you’d add a lemon slice to your coke!

Cut diagonal slices into the skin on both sides of the Chicken Wings (2 lb).

Heat a frying pan over medium-high heat. Once hot, add Cooking Oil (2 Tbsp), then add the chicken wings top side down. Sear for 3-5 minutes, until the skin is golden brown.

Flip the wings and cook the other side for 2-3 minutes until the skin is golden brown.

Add Fresh Ginger (1/2 in), the light part of the Scallions (3 stalks), and Shaoxing Cooking Wine (2 Tbsp). Cook for a bit to allow the alcohol to evaporate, 2-3 minutes.

Add the Coca Cola (2 cans), Soy Sauce (2 Tbsp), and Oyster Sauce (1 Tbsp). Turn to high heat and bring to a boil. If there is too much foam, skim off some. Turn heat to medium, then cover for 10-12 minutes.

Add the Lemon Slices (1/2). Bring to high heat and stir until the sauce has been reduced to a thick, saucy consistency, then turn off the heat.

Sprinkle with chopped scallions and White Sesame Seeds (to taste). Serve with White Rice (to taste) if desired.
