Coconut Ice
Coconut Ice is a classic, no-bake English candy made with shredded coconut, condensed milk and powdered sugar. You'll need at least 10-12 hours to dry mixture out before you can cut and eat it, but it's well worth the wait! A great holiday treat and the perfect gift for anyone with a sweet tooth.

Divide the Sweetened Condensed Milk (1 1/3 cups) into two bowls. Add the Red Food Coloring (2 dashes) to the one half.

Add half of the Unsweetened Shredded Coconut (4 cups) to the bowl.

Add half of the Powdered Confectioners Sugar (4 cups).

Mix everything together until just incorporated.

Empty the bowl on to a wooden board dusted with a little extra powdered sugar.

Knead until it comes together completely. Set aside.

Repeat the same with the remaining half of condensed milk, shredded coconut and powdered sugar.

Turn out on to a powdered sugar-dusted surface and knead until it comes together completely.

On a piece of baking paper, roll out and shape the white coconut ice layer into a square, about 3/4 inches thick

Repeat with the pink coconut ice.

Place the pink coconut ice on top of the white, and press down firmly. Leave to dry out, uncovered, for about 10-12 hours.

Once the coconut ice is dry, cut into small squares. Serve and enjoy!
