Coffee and Ricotta Dessert
This rich Italian dessert combines the creaminess of fresh ricotta, the satisfying aroma of espresso and the sweet headiness of rum to create a delicious, smooth dessert that melts in the mouth and warms the throat.

Dissolve the Gelatin Powder (2 tsp) in Water (2 Tbsp). Set aside.

Brew the Espresso (2 Tbsp).

In a blender, combine the Heavy Cream (3/4 cup), Ricotta Cheese (1 cup), Ground Coffee (1 Tbsp), Powdered Confectioners Sugar (1 cup), and the Vanilla Bean Paste (1/2 tsp).

Blend until all ingredients are combined and creamy.

Pour into a saucepan.

Bring it to a gentle boil, then remove pan from heat and add in the gelatin mixture. Stir until gelatin dissolves.

Portion up the cream into 6 containers. Let them stand on your kitchen counter until cool, then refrigerate them for about 2 hours.
