Cooking Instructions

Place the peeled and chopped Potatoes (2 lb) in a large pot of salted water. Bring to a boil over medium-high heat, then reduce the heat to simmer for 15–20 minutes, or until the potatoes are fork-tender.

While the potatoes cook, melt the Unsalted Butter (2 Tbsp) in a skillet over medium heat. Add the chopped Leek (1 stalk) or White Cabbage (2 cups) and sauté for 3–5 minutes until softened and vibrant green. Remove from heat and set aside.

Once the potatoes are cooked, drain them and return them to the pot. Add the remaining Unsalted Butter (2 Tbsp) and Whole Milk (1/2 cup) or cream, then mash the potatoes until smooth and creamy.

Fold the sautéed greens and leek into the mashed potatoes. Season with Salt (1/2 tsp) and Ground Black Pepper (1/4 tsp) to taste, ensuring everything is well-mixed.
