Cooking Instructions

step 1

Rinse the Chicken Wings (2 lb) with Lime Juice (1 Tbsp) and pat dry.

step 2

Season with Salt (1 tsp), Ground Black Pepper (1/2 tsp), Ground Allspice (1/2 tsp), and Green Seasoning (1 Tbsp). Let marinate for at least 30 minutes.

step 3

Heat Vegetable Oil (1 Tbsp) in a pot over medium heat. Add Brown Sugar (1 Tbsp) and let it caramelize to a deep golden brown.

step 4

Add chicken wings, turning to coat in the caramelized sugar. Cook for 5-7 minutes until browned.

step 5

Stir in Onion (1/2), Garlic (3 cloves), Red Bell Pepper (1/2), Fresh Thyme (1 sprig), Curry Powder (2 Tbsp), Ground Turmeric (1 tsp), and Paprika (1 tsp). Cook for 2 minutes.

step 6

Pour in Chicken Broth (1 cup) and add the Scotch Bonnet Pepper (1) (whole or sliced for more heat).

step 7

Cover and simmer for 35-40 minutes, stirring occasionally, until the wings are tender and the sauce thickens.

step 8

Garnish with Scallions (2) and serve hot.
