Detox Salad and Ginger Lime Cardamom Dressing

It has a bit of sweetness from the raisins, carrots and apple, a little earthiness from the beets, a slight sour from the lime juice, and some zest from the ginger and cardamom. Add to that how colorful it is, healthy, nutritious, easy to make and so fresh…it’s a detox keeper!

Cooking Instructions

step 1

Juice the Lime (1) into a mixing bowl. Finely grate the Fresh Ginger (1 in) using a micro-plane and add that to the same bowl.

In a small bowl, mix together the lime juice, ginger, Ground Cardamom (1/8 tsp), and Pure Maple Syrup (1 tsp). Set the ginger lime dressing aside to let the flavors mellow and come together.

Julienne or grate the Beet (1). Keep the beet greens.

Finely slice the beet greens (3 to 4 leaves or 1 cup).

Roughly chop the Fresh Cilantro (1/2 cup). Grate the Carrots (2). Core and dice the Apple (1).

Place the carrots, apples, beets, chopped greens, Golden Raisins (1/2 cup), and cilantro in a large bowl.

Pour dressing over the salad ingredients and toss to coat.

Serve topped with a good sprinkle of Hemp Hearts (3 Tbsp) and some extra raisins if you like as they add a nice sweetness. If you'd like, cut some Tofu (to taste) into cubes and toss it into your salad for an added dose of protein.
