Dominican Green and Yellow Fried Plantains with Mojo Sauce

So EASY and delicious! In the Caribbean, you'll find them on many islands like Puerto Rico and Cuba. Make these with Mojo sauce on the side and it makes for a great entertaining appetizer!

Cooking Instructions

Heat the Corn Oil (as needed) over medium heat in two separate skillets.

While the oil is heating up, peel the plantains. Cut the Plantain (1) into about 1-inch circles. Cut the Plantain (1) in thinner diagonal slices.

Fry green plantain for about 1 minute on each side and set aside. At the same time, fry yellow plantain until each side is nice and golden. Set aside until serving.

Take the green plantain circles and flatten them. You can smash them with the bottom of a plate, pan, or cup. Put the flattened plantains back in the oil and fry for another 2-3 minutes until nice and crunchy. Remove the plantains and drain them on paper towels.

In a small bowl, mix Corn Oil (4 Tbsp), Fresh Cilantro (1/2 tsp), and Garlic (1/4 tsp). Serve with the plantains.
