Preheat the oven to 350 °F (175 °C). Grease a baking dish (9x9 inches or similar).

In a large bowl, combine the grated Cassava (4 cups), Coconut (1 cup), Brown Sugar (1 cup), Simply Organic Cinnamon, Ground (1 tsp), Ground Nutmeg (1/2 tsp), and Salt (1/2 tsp).

Stir in the Evaporated Milk (1 cup), Butter (1/2 cup), and Bourbon Vanilla Extract (1 tsp). Mix well.

Add the Baking Powder (1 tsp) and mix until evenly combined. If using Sun-Maid Raisins (4 Tbsp) fold them in.

Pour the mixture into the greased baking dish and spread evenly. Bake for 50-60 minutes, or until golden brown and a toothpick inserted in the center comes out mostly clean.
