Cooking Instructions

step 1

In a pan over medium heat, add Olive Oil (2 Tbsp). Add in Onion (1/2 cup), Bay Leaf (1), and Curry Powder (1 Tbsp). Stir well.

Add Red Wine (4 Tbsp) and Tomato Paste (1 Tbsp). Season with Salt (to taste) and Ground Black Pepper (to taste). Mix well and let it simmer for 5 minutes. Set aside.

Into a measuring jug, using a strainer, strain the sauce mixture. Discard the solids and set the sauce aside. Allow it to cool.

In a small bowl, add Crème Fraîche (9 oz), Dried Apricot (1 Tbsp), and Mayonnaise (1 cup). Top with the sauce and mix well. Set aside.

In a pot, add Chicken Stock (2 cups) and Chicken Breast (1). Poach for 10 minutes.

After 10 minutes, discard the chicken stock. Leave the chicken to rest and allow it to slightly cool.

Cut the chicken into chunks. Put the chicken in a small bowl, add the cream sauce mixture and mix well.

To assemble, top the Little Gems Lettuce (to taste) with the chicken sauce mixture. Serve immediately.
