Preheat the oven to 350 degrees F (180 degrees C).

In a mixing bowl, add Cornbread Mix (1/2 box), Milk (3/4 cup), Eggland's Best Classic Egg (1), and Vegetable Oil (4 Tbsp). Prepare the cornbread according to the instructions on the package. Set aside.

In a skillet over medium heat, heat Olive Oil (2 Tbsp). Once hot, cook the Yellow Onion (1) and Red Bell Pepper (1) until soft for about 3 minutes.

Add Garlic (2 cloves) and stir for an additional minute.

Add Ground Beef (1 lb) and brown for about 3 minutes or until cooked through.

Continue stirring in Tomato Sauce (1 can), Del Monte® Whole Kernel Corn (1 can), Red Kidney Beans (1 can), Cayenne Pepper (1/2 tsp), Ground Cumin (1 tsp), Salt (to taste), and Ground Black Pepper (to taste). Bring to a simmer for about 10-15 minutes or until the liquid is reduced.

Transfer to a baking dish. Sprinkle the top with Shredded Sharp Cheddar Cheese (1 cup).
