Cooking Instructions

step 1

In a medium saucepan, whisk together the Heavy Cream (2 cups), Granulated Sugar (4 Tbsp), Corn Starch (1 Tbsp), Agar-Agar Powder (1/4 tsp), and Fine Salt (1 pinch). Heat the mixture over medium heat for about 5-7 minutes, stirring constantly, until it begins to thicken. Avoid boiling.

step 2

Remove the saucepan from the heat and stir in the Bourbon Vanilla Extract (1/2 tsp). Allow the mixture to cool slightly.

step 3

Divide the custard evenly into 4 ramekins. Let them cool to room temperature, then cover and refrigerate for 2-4 hours, or until the custard is fully set.

step 4

Once the custards are set, sprinkle Granulated Sugar (4 Tbsp) evenly over each ramekin.

step 5

Use a kitchen torch to caramelize the sugar until it forms a golden, crisp layer. Alternatively, broil in the oven on high for 1-2 minutes, watching closely to prevent burning.

step 6

Allow the caramelized topping to cool for a minute to harden, then serve immediately.
