Feta, Sundried Tomato and Pistachio Truffles
A step beyond plain cheese and crackers, while still being easy enough to make so that they don't consume your whole day. I love them for a few reasons: Anything encrusted in pistachios is guaranteed to be good.

Preheat the oven to 400 degrees F (200 degrees C).

To roast the garlic, pour Olive Oil (1 tsp) on top the Garlic (6 cloves) cloves and cover with foil. Roast in a baking dish for 30 minutes, or until golden brown and soft.
