Grass-Fed Beef and Zoodle Pad Thai
This non-traditional pad thai is filled with mushrooms and zoodles, grass-fed beef and a yummy flavorful sauce!

Spiralize or thinly slice Zucchini (3)

Dice the Onion (1/2).

Crush the Garlic (2 cloves)

Slice the Mushrooms (2 1/4 cups).

Wash and thinly slice the Scallions (to taste)

Wash and roughly chop the Fresh Cilantro (to taste)

Heat a medium skillet over medium heat, add Olive Oil (1 Tbsp). Once the oil is warm, add Grass-Fed Ground Beef (1 lb) and cook until brown. Then add garlic and onions and cook for another ten minutes or until onions are translucent.

While the beef cooks, bring a medium pot of water to boil. Place the Brown Rice Pad Thai Noodles (3 cups) in a deep bowl and pour the boiling water over the noodles until completely submerged. Stir every couple of minutes until soft, but still a little undercooked, ten minutes. Drain and set aside (you may want to toss the noodles with a bit of oil to keep them from sticking to each other).

In a small bowl, whisk Soy Sauce (1/2 cup), Chili Garlic Sauce (1 Tbsp), Corn Starch (1 Tbsp), Beef Stock (4 Tbsp), juice from Lime (1/2) and Fish Sauce (2 tsp) until combined. Pour the sauce over the ground beef mixture.

Add the zoodles and mushroom to the ground beef mixture and cook for another ten minutes.

Toss with the pad thai noodles and garnish with fresh cilantro ( to taste) and scallion ( to taste), enjoy!
