Grilled Asparagus Salad
This colorful salad with fresh grilled asparagus is a lovely sneak peek at spring!

On a barbecue or in the oven, grill Asparagus (3 cups). Brush the asparagus with Olive Oil (as needed), and season with Salt (to taste) and Ground Black Pepper (to taste).

Grill with high heat turning until tender. Cool then cut into 1-in pieces.

In large bowl, toss the Salad Greens (3 cups), Pea Shoots (1 bunch), grilled asparagus, Cucumber (1), Grape Tomatoes (1 cup), Daikon Radish (1 cup), Kalamata Olives (1/2 cup) and Sharp White Cheddar Cheese (2 cups).

In a bowl whisk the following together for dressing: juice from Orange (1), juice from Lemon (1/2), Red Wine Vinegar (1 Tbsp), Dijon Mustard (1 tsp), and Tarragon (1 Tbsp).

After all has been whisked together, drizzle desired amount over your plated salad. Serve with Pita Chips (to taste), if desired.
