Cooking Instructions
step 1
Preheat your oven to 350 °F (175 °C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
step 2
In a medium bowl, whisk together the All-Purpose Flour (2 cups), Baking Powder (1 tsp), Baking Soda (1/2 tsp), Simply Organic Cinnamon, Ground (1 tsp), Ground Nutmeg (1/2 tsp), and Salt (1/4 tsp). Set aside.
step 3
In a large mixing bowl, beat together the softened Unsalted Butter (1/2 cup) and Granulated Sugar (1 cup) until light and fluffy, about 3-4 minutes.
step 4
Add the Eggland's Best Classic Eggs (2) one at a time, beating well after each addition. Stir in the Vanilla Extract (1 tsp).
step 5
Gradually add the dry ingredient mixture to the wet ingredients, alternating with the Milk (1/2 cup). Start and finish with the dry ingredients. Mix until just combined.
step 6
Gently fold in the sliced Apples (4) and Sun-Maid Raisins (1/2 cup) (if using) into the batter.
step 7
Pour the batter into the prepared cake pan and spread it evenly. Sprinkle the top with Granulated Sugar (1 Tbsp).
step 8
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake should be golden brown on top.
step 9
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature, topped with custard or whipped cream if desired.
