Jam Crumble Shortbread Slices
Using only the most basic of ingredients, this classic dessert slice is perfect for afternoon tea, bake sales, or kid's parties! Simple buttery shortbread dough is combined with your favorite jam or spread, then topped with a delicious shortbread crumble. Baked until golden, this slice is budget-friendly and guaranteed to please - give it a go!

Preheat the oven to 375 degrees F (190 degrees C).

In a bowl, add All-Purpose Flour (2 cups), Granulated Sugar (2/3 cup), and Salt (1 pinch), stir until nicely combined.

Make a hole in the center of the dry ingredients, and pour in Unsalted Butter (3/4 cup). Using a wooden spoon, mix together until you get a soft dough.

Using clean hands bring the mixture together until crumbly.

Set aside 1/4 of the dough mixture. Line a greased 8-inch standard square cake pan with parchment paper.

Transfer 3/4 of the dough mixture into the cake pan. Using your fingers press all the way to the edges, to make it smooth and even on the top. You can also use a flat bottom glass to make the top even.

Using folk points, make little indent marks across the surface of the dough. This stops the dough from rising when it bakes.

Top it off with Jam (1 cup). Using the back of a spoon, spread the jam out to all corners of the dough until it's even. Set it aside.

Meanwhile, prepare the crumble mixture. Using clean hands (fingers and thumbs), rub the remaining dough together until nubbly bits of dough start coming together.

Scatter the crumble mixture over the top of the shortbread slice.

Bake in the oven for about 20-25 minutes or until golden brown.

Let it cool on the countertop for 20 minutes.

Once cooled, dust the top with Powdered Confectioners Sugar (2 Tbsp). Using a sharp knife cut the shortbread into squares.
