Kidney Bean Quesadilla

Discover a delicious Quesadilla with Kidney Beans & Tomato Pepper recipe. You can sneak in some veggies in this too since cheese masks them and the kids would not notice them, at least my kids did not. If you want to keep it even simpler, you can make the cheese ones where the filling is just cheese. I have used store-bought tortillas for this recipe. Off to an easy and healthy recipe.

Cumin Seeds

Garlic, minced

Red Kidney Beans, cooked

Onions, chopped

Tortillas
to taste
Salt

Chili Powderadjust to taste

Cooking Instructions

step 1

Coarsely mash the Red Kidney Beans (1 1/2 cups) and set aside.

Heat Olive Oil (1 tsp). Add Cumin Seeds (1 tsp) and Garlic (2 cloves) and sauté for a few seconds.

Add the Onions (4 Tbsp) and sauté until beginning to brown.

Add the beans, Salt (to taste), and Chili Powder (1/4 tsp). Mix and simmer for 5 minutes.

Heat a griddle and place a Tortillas (4) on it. Spread the bean mixture on one half of it and sprinkle with Cheese (1 cup).

Fold the tortillas in a semi-circle and allow it to brown on both sides.

Remove from heat and allow to rest for a few minutes. Slice and serve.
