Korean Beef Bowl

Boys & Girls Club of Westminster (CA) Teen Cooking Club Week 1 Challenge winners Tyler, Andrew and An's Korean Ground Beef recipe. Inspired by One Good Thing. This recipe for Korean Ground Beef is cheap and easy, and it's even more nutritious with extra broccoli and red peppers.

Lean Ground Beef
2Tbsp
Soy Sauce

Chili Powder

Broccoli

Water

Cooking Instructions

step 1

Rinse the uncooked Brown Rice (2 cups) in a strainer, until the water is clear.

Place the rinsed rice in a pot with Water (3 cups). Bring water to a boil. Turn down to a simmer for about 45 minutes, then turn off heat, but leave the rice covered in the pot, on the burner, for about another 15 minutes.

While the rice is cooking, slice the Bell Peppers (2) and Garlic (3 cloves). Chop the Broccoli (1 head) into florets. Thinly slice the white part of the Scallion (1 bunch) and set them aside for garnish later.

Season the Lean Ground Beef (1 lb) with Chili Powder (2 Tbsp), Soy Sauce (2 Tbsp), Salt (to taste), and a generous pinch of Freshly Ground Black Pepper (to taste).

In a skillet over medium heat, cook the beef until browned. Make sure to break it up as it browns.

Once the meat has browned, add in the chopped vegetables and a bit of Chicken Stock (1 splash) and simmer for about 10 minutes.

Put cooked brown rice in a bowl, top with beef and veggie mixture. Sprinkle with Sesame Seeds (to taste) and sliced scallions. Enjoy!
