Korean Corn Cheese

This Korean fast food favorite is so delicious with its bubbling cheese and sweet corn.

Ingredients

1Tbsp
Butter
2 1/2cups
Corn Kernels, drained, rinsed
1bunch
Scallion, thinly sliced2 scallions per 4 servings
1Tbsp
Mayonnaise
1tsp
Granulated Sugar
to taste
Kosher Salt
to taste
Freshly Ground Black Pepper
2/3cup
Mozzarella Cheese, grated
to taste
Cayenne Pepperoptional

Cooking Instructions

step 1

Heat the grill or broiler setting of your oven to medium or preheat your oven to 350 degrees F (180 degrees C).

Melt the Butter (1 Tbsp) in a small or medium-sized ovenproof saucepan or cast iron frying pan over medium heat. Add the Corn Kernels (2 1/2 cups) and fry for 4-5 minutes, until some char marks appear.

Add the Scallion (1 bunch) and quickly stir fry for 1 minute. Remove from the heat.

Add the Mayonnaise (1 Tbsp) and Granulated Sugar (1 tsp) and season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste). Stir and mix together well.

Spread the Mozzarella Cheese (2/3 cup) over until the corn mix is fully covered. Gently sprinkle over Cayenne Pepper (to taste).

Transfer to the broiler, grill, or oven and bake for 5-8 minutes, or until the cheese has melted and turned golden brown in places.

Remove from the oven and leave to rest for 2 minutes.
