Cooking Instructions

Prepare Farro (1 1/2 cups) per package directions. While farro is cooking, prepare the dressing.

In a small bowl, whisk together the Champagne Vinegar (3 Tbsp), Dijon Mustard (2 tsp), Shallot (1 tsp), Kosher Salt (1/2 tsp), and Freshly Ground Black Pepper (1/2 tsp). Continue to whisk while slowly adding the Olive Oil (4 Tbsp) until the vinaigrette is well combined. Stir in the Chinese Chives (1 Tbsp).
