Cooking Instructions

In a large pot or deep skillet, heat Olive Oil (2 Tbsp) over medium heat. Add Garlic (4 cloves), Shallot (1), and Crushed Red Pepper Flakes (1 tsp). Sauté for about 1-2 minutes, until fragrant.

Pour in the Dry White Wine (1 cup), scraping up any bits from the pan. Let it simmer for 2 minutes.

Then stir in the Canned Diced Tomatoes (1 can), Tomato Paste (2 Tbsp), Vegetable Broth (1/2 cup), Dried Oregano (1 tsp), Smoked Paprika (1/2 tsp), Salt (to taste), and Ground Black Pepper (to taste). Simmer for another 5 minutes until slightly thickened.

Add the Fresh Mussels (2 lb) to the pot, cover, and cook for 5-7 minutes, shaking the pan occasionally, until the mussels open. Discard any mussels that do not open.
