The Indian pasta recipe is for all those who are looking for a curry-flavored vegan pasta! This Indian style pasta is prepared with mushroom, veggies, and spices. A delicious one-pot pasta dish that's good enough to satisfy your hunger pangs on any day! Goes great with garlic bread.

Cooking Instructions

Heat Olive Oil (1 Tbsp) in a pan. Once the oil is hot, temper Mustard Seeds (1 tsp) and Cumin Seeds (1 tsp).

As they begin to crackle, add Curry Leaves (5), Garlic (8 cloves), Ginger Paste (1 Tbsp), and part of Fresh Cilantro (2 Tbsp).

Then add the Jalapeño Pepper (1) and Onion (1). Fry till the onions turn translucent.

Now add Tomatoes (2) and Salt (to taste). Continue to sauté till the tomatoes are cooked.

Add Mushroom (1 cup) to the pan. Mix and saute for 5-7 minutes or till the mushrooms are cooked.

Next add the Edamame (4 Tbsp). Continue to saute for 2 more minutes.

Then add the dry spices like Ground Turmeric (1 tsp), Ground Cumin (2 tsp), Garam Masala (1 tsp), Paprika (2 tsp), Dried Oregano (1 tsp), and Crushed Red Pepper Flakes (1 tsp).

Add the cooked Pasta (1 lb). Mix it all together so that the pasta coats well with the masala. Adjust the salt as needed.

Garnish this Indian-style pasta with remaining Fresh Cilantro (2 Tbsp), Vegan Parmesan Cheese (2 Tbsp), and juice from Lemon (1).
