Pea and Garlic Hummus with Crudités
Chef Gale Gand's pea and garlic hummus is a perfect spring and summer dipping dish. It smacks of the first produce of the season and is such a lively green color! Serve with your choice of seasonal crudités (our favorite), or atop crostini, beef tenderloin or shrimp.

Cruditesor Carrots, Cucumber, Red Bell Pepper, Radish, etc.

Cooking Instructions

Place Frozen Green Peas (4 cups), Fresh Mint Leaves (10), Garlic (2 cloves), Salt (1/2 tsp), Ground Black Pepper (1/8 tsp), and Extra-Virgin Olive Oil (1/3 cup) in a food processor.

Purée until well blended and relatively smooth.

Slice your favorite seasonal Crudites (to taste).

Scoop hummus into a medium size bowl and arrange your choice of crudites within or serve on the side. Add a small pool of Extra-Virgin Olive Oil (1 Tbsp), serve and enjoy!
