Pickled Tomatoes
How can you improve a perfect tomato? By pickling it! Any salad, sandwich or any other dish that contains tomatoes will get an extra punch of flavor from these pickled ones.

Wash the Tomatoes (8) and use a knife to cut an "X" on the bottom of each.

Blanch the tomatoes in boiling water with a generous pinch of Kosher Salt (to taste) water for 30 seconds.

Remove the tomatoes and place an Ice (to taste) bath to stop the cooking.

Peel the tomatoes and place them in a non-reactive container.

Prepare the pickling liquid for the tomatoes by mixing Dashi Moto Soup Stock Base (1 cup), Rice Vinegar (2 cups), Granulated Sugar (1/3 cup), Soy Sauce (3 Tbsp) and a generous pinch of Kosher Salt (to taste).

Cover the tomatoes with the pickling liquid. Seal, then pickle overnight. Store them in the marinade if desired, but the flavor will get stronger over time. Enjoy!
