This is just the snack you want at your next summer barbecue! Perfect for those watermelon rinds you were planning on throwing away. Takes about two days to get the final pickles.

Cooking Instructions

step 1

Soak the Watermelons (21 cups) rind in slightly salted water overnight.

Boil the rind in the saltwater until it can be pierced with a fork.

Drain.

Boil the Granulated Sugar (7 cups), Distilled White Vinegar (2 cups), Ground Cloves (1/2 tsp), and Simply Organic Cinnamon, Ground (1/2 tsp).

Pour over the rind. Let stand overnight.

Drain, reserving the liquid.

Heat the syrup.

Pour over rind. Let stand overnight.

Heat the syrup with the rind until it comes to a boil.
