Pineapple Jerk Chicken: Sweet, Spicy & Smoky Island Flavor

In a bowl, mix Pineapple Juice (1 cup), Soy Sauce (4 Tbsp), Lime Juice (2 Tbsp), Brown Sugar (2 Tbsp), Jerk Seasoning (2 Tbsp), Ground Allspice (1 tsp), Smoked Paprika (1 tsp), Fresh Thyme Leaves (1 Tbsp), Garlic (3 cloves), and Scotch Bonnet Pepper (1).

Place Bone-In Chicken Thighs (4) in a resealable bag or dish and pour the marinade over it. Marinate for at least 2 hours or overnight.

Preheat grill to medium heat (or oven to 375 degrees F/190 degrees C).

Remove chicken from marinade and pat dry. Reserve the marinade.

Heat oil in a grill pan with Vegetable Oil (1 Tbsp) or over charcoal, then grill chicken for 5-7 minutes per side, basting occasionally with marinade.

Add diced Pineapple (1/2 cup) to the grill for the last few minutes, caramelizing lightly.

If baking, place chicken in a baking dish, pour reserved marinade over it, and bake for 40-45 minutes, turning once.
