Ingredients
Cooking Instructions
step 1
In a large bowl add Water (2 1/2 cups), Salt (1 tsp), Oil (1 Tbsp) and mix.
step 2
Next slowly add the Harina P.a.n.® White Corn Meal (2 cups) while whisking using a spoon. Using your hands, mix and break apart any lumps. If the mixture is too watery add more Harina Flour. However, we need the mixture to be a bit wet so that it is not too crumbly when making the arepas. Let the mixture rest for 5 minutes.
step 3
Wet your hands with some water and taking a handful of the mixture roll into a ball and then press together with your hands to create the circular shape. If the edges crack, use your wet fingers to push and close the cracks.
step 4
In a large pan over medium heat, add a little bit of oil and spread using a napkin. Place the arepa down and cook for 5-7 minutes without moving them.
step 5
Flip and cook for another 10 minutes. Make sure the bottom is fully cooked before flipping to avoid sticking and breaking the arepa apart when flipping.
step 6
When you see a golden crust formed on both sides, the arepas are done. You should be able to tap them and hear a hollow sound. Using a knife, open the arepas 3/4 of the way so that you can fill them but still have both top and bottom remain attached.
step 7
Next, to make the filling start by separating the Fresh Cilantro (6 1/4 cups) leaves from the stems. Stack the leaves and roll, then chop the cilantro leaves. Next finely chop the cilantro stems.
step 8
In a large pan add Sunflower Oil (1 2/3 Tbsp), White Onion (1), diced cilantro stems and season with Salt (1 tsp). Stir and cook for about 4 minutes.
step 9
Halve the Avocados (2) then quarter and peel the skin. Dice 1 avocado and cut the other into slices.
step 10
In a large bowl add the onion and cilantro mixture along with the diced avocado. Using a fork mash everything together. Once mashed, add in the Mayonnaise (4 Tbsp) and mix followed by the Chicken Breasts (14 oz), and mix once more. Finally, add the chopped cilantro leaves and mix again.
step 11
To make the Reina Pepiada, stuff your open arepa with the mixture and top with avocado slices. To make the Arepa Sifrina, add Shredded Gouda Cheese (1 cup) on top of the avocado slices.
