When you are feeling very lazy, or when the weather is not inviting, and you can’t be bothered to go out for food shopping or cook anything complicated. And you do have a few tomatoes, onions, and some basil left in your fridge! Back to basics, a recipe simple to prepare, delicious to taste. The perfect companion for your favorite cheese sandwich.

Ingredients

Tomatoes, roughly choppedaround 300g

Red Onion, slicedaround 150g

Vegetable Bouillon Cubesor equivalent in vegetable stock

Canned Tomato Purée
1/4tsp
Salt

Ground Black Pepper

Fresh Basil, finely chopped

Cooking Instructions

step 1

Heat Olive Oil (2 Tbsp) in a pot and add Red Onion (1) and Tomatoes (4) then stir-fry for 2-3 minutes.

Add the Fresh Basil (1 handful), Salt (1/4 tsp), Ground Black Pepper (1 pinch), and Vegetable Bouillon Cubes (2 tsp) and stir-fry for another 2-3 minutes.
