Smoked Mahi Mahi Dip with Jalapeño and Pineapple

Smoked fish is so flavorful and bold enough to stand up to many seasonings. To complement the mild flavor of smoked mahi-mahi, we gave this spread a tropical touch of smoked pineapple, a kick from jalapeño peppers, and balanced it out with herbal notes of fresh thyme.

Cooking Instructions

step 1

In the bowl of a standing mixer with the paddle attachment, combine Cream Cheese (3/4 cup), Sour Cream (1/3 cup), Scallion (1 bunch), Fresh Thyme Leaves (1 1/3 Tbsp), Salt (to taste), Freshly Ground Black Pepper (to taste), and Lemon Zest (1). Mix on low speed until well blended.

Add half of the Mahi-Mahi Fillets (8 oz), Pineapples (4 Tbsp), Jalapeño Peppers (2), and mix on low speed until thoroughly blended. Adjust the seasonings to taste. Add a few shakes of Hot Sauce (to taste) if it is not spicy enough.

Stir in the remaining Mahi-Mahi Fillets (8 oz) a little at a time, blending gently by hand, until it is incorporated.

step 4

Chill in the refrigerator for at least 1 hour.

Serve with crackers or toasted baguette slices. Enjoy!
