This simple yet delicious combo is loaded with layers of flavors, easy and affordable to make, and done in less than 30 minutes. Pair with some crusty bread as an appetizer, or over rice for a complete meal!

Canned Lima Beans, drained

Diced Tomatoes

Cooking Instructions

Heat a nonstick frying pan over a medium heat and add Extra-Virgin Olive Oil (2 Tbsp). Let warm for 2 minutes.

Add the Garlic (4 cloves) and Onion (1) and mix with the oil. Cook for 3 minutes.

Add the Green Bell Pepper (1/2) and mix well. Cook for 4 minutes.

Add the Canned Lima Beans (2 cups). Season with Sweet Paprika (1/4 tsp), Hot Smoked Paprika (1/4 tsp), Ground Cumin (1/2 tsp), Sea Salt (to taste), and Ground Black Pepper (to taste). Mix everything together until well combined.

Stir in the Diced Tomatoes (1 can). Taste and adjust seasonings, then change temperature to low heat. Let simmer for 4-5 minutes, then remove from the heat.
