Cooking Instructions

Preheat the oven to 400 degrees F (200 degrees C).

In a small bowl, make the spice rub by mixing together the Chili Powder (1 Tbsp), Brown Sugar (1 tsp), Smoked Paprika (1/2 tsp), Salt (1/2 tsp), and Ground Black Pepper (1/4 tsp).

Place the Salmon Fillets (4) on a cutting board. Pat dry with a paper towel, then rub each portion generously with the spice rub.

Bake at 400 degrees F (200 degrees C) for 8-10 minutes, or until browned on top and cooked to your desired level of doneness.

While the salmon cooks, prepare the salsa. Add the Pineapple Tidbits (1 can) to a nonreactive mixing bowl. Stir in the Red Onion (1), Fire Roasted Diced Chilies (2 Tbsp), Fresh Cilantro (1 bunch), juice of a Lime (1), and Salt (1/8 tsp).
