Spicy Sausage Pasta Shells

Cooking Instructions

Dice the Onion (1/2) and Red Bell Pepper (1/2).

Thinly slice Garlic (5 cloves). Roughly chop Sun-Dried Tomatoes (3/4 cup).

Thinly slice Spicy Italian Sausage Link (1 lb).

Bring a large pot of water to boil, add a large pinch of Salt (to taste). Add Pasta Shells (13 oz) and cook according to package directions until al dente.

In a large pan over medium-high heat, add Olive Oil (2 Tbsp) then add sausages. Cook until sausage is cooked through. Remove from the pan and set aside.

Add onions and cook for 3 minutes, until translucent. Add red bell pepper and cook until almost softened, about 2 minutes.

Add garlic, sun-dried tomatoes, and Italian Seasoning (1 tsp). Stir and cook for about 1 minute.

Add Water (1 cup) and deglaze the pan. When it comes back to boil, add Cream (1 1/2 cups) and allow to simmer for 2 minutes. Add Grated Parmesan Cheese (1 cup) and cook until melted.

After the cheese is melted, turn off the heat and add in Fresh Spinach (8 oz), season with Salt (to taste) and Ground Black Pepper (to taste).

Combine pasta, sausage, and sauce.

Serve warm with a sprinkle of Crushed Red Pepper Flakes (to taste).
