This amazing white chicken chili can be made in just 20 minutes using Rotisserie chicken for added convenience. It’s so deliciously savory with just the right amount of spice! Cooking Instructions

step 1

In a large stockpot, heat Olive Oil (4 Tbsp) over medium heat. Cook the Yellow Onion (1) until soft and slightly browned, about 3 minutes.

Pour in Chicken Stock (2 cups) and add Cream Cheese (1 cup). Stir to combine and simmer for about 3 minutes.

Add in the Rotisserie Chicken (1 lb), Corn (1 can), and White Beans (2 cans). Stir until combined.

Stir in the Chili Seasoning (1 packet), Ground Cumin (2 tsp), and Salt (to taste). Increase the heat to medium-high and continue simmering for 10 minutes or until the liquid is reduced and thickened.

Remove from heat and add Lime (1) then stir to combine.

Transfer to a serving bowl and top with Shredded Parmesan Cheese (to taste), Avocados (to taste), Fresh Cilantro (to taste), Tortilla Chips (to taste), and Jalapeño Peppers (to taste). Enjoy warm!
