Tom Yum Cashews
These Tom Yum Cashews are a delicious snack for any time of the day! Each cashew nut is coated in a sweet and spicy Tom Yum Paste, bits of minced lemongrass and cilantro, then topped with finely julienned kaffir lime leaves for extra bursts of flavor!

Preheat oven to 200 degrees F (93 degrees C). Line a baking sheet with parchment paper.

In a bowl, combine Raw Cashews (1 3/4 cups), Tom Yum Chili Paste (1 Tbsp), Coconut Oil (1 Tbsp), juice from Lime (1/2), Granulated Sugar (2 tsp), Fresh Cilantro (1 tsp), and the white portion of the Lemongrass (1 stalk). Stir well until all of the cashew nuts are coated.

Spread cashews on the baking sheet.

Roast for 20 minutes, stirring every 5 minutes or so.

When the cashew nuts have cooled completely, top with Kaffir Lime Leaf (1). Serve and enjoy!
