Vegan Oven Baked Falafel
An authentic vegan falafel recipe that is crispy on the outside but moist on the inside. It is the perfect meal prep recipe that is healthy, gluten-free, and vegan.

Preheat the oven to 390 degrees F (200 degrees C).

Drain and rinse the soaked Dried Chickpeas (1 cup).

Place soaked Chickpeas, Scallion (1 stalk), Fresh Cilantro (1/2 cup), Fresh Parsley (1/2 cup), Garlic (3 cloves), Olive Oil (1 Tbsp), Chickpea Flour (2 Tbsp), Baking Powder (1 tsp), juice from Lemon (1), Chili Powder (1/2 tsp), and Salt (to taste) in a high-speed blender or food processor. Pulse until a crumbly dough forms.

Scoop out 1 tablespoon at a time and form it into balls.

Bake it in the oven for 20-25 minutes, or until the edges of the falafels are slightly golden.
